We take pride in having one of the largest county fairs in the state of Iowa.  The Plymouth County Fair continues to grow each year!  The fair’s success is attributed to the work of hundreds of volunteers, entertainers, and exhibitors.

2010 Best Baked Good – Open Class Department

Lime Sherbet Cake By Sydney Rand

Cake:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
5 egg whites (beat stiff)
¾ cup shortening
1 ½ cups sugar
1 ½ teaspoon white vanilla
1 ½ cup Blue Bunny Lime Sherbet
¼ cup lime juice

Combine dry ingredients. Beat shortening for 30 seconds. Add sugar & vanilla. Beat until fluffy. Add dry ingredients, sherbet & lime juice alternately in beaten mixture, beating on low speed after each addition. Fold beaten egg whites into flour mixture. Bake at 375° in two prepared, 8” round cake pans for 20 minutes. Test with toothpick for doneness. Cool.

Lime Butter Cream Frosting:
½ cup butter, softened
½ cup margarine
4 cups powdered sugar
1 teaspoon vanilla
¼ cup lime juice

Cream butter and margarine. Slowly add powdered sugar. Add vanilla and lime juice. Mix until creamy. Spread frosting on cooled cake.

Cookie Crumbles: Crumble cookies from ice cream sandwiches and sprinkle on top of cake. I used the cookies from Blue Bunny Birthday Party Ice Cream Sandwiches.
